Italian Pecorinos Washed in Tomato Paste
In the gorgeous Tuscan countryside, Fattoria Buca Nuova is producing some of the finest pecorinos. The Pecorino Rosso is a small wheel with a reddish rind. The striking color could be attributed to the fact that it is rubbed with tomato paste before its short 45 day aging process begins. The flavors are incredibly well balanced: no acidity, delicious earthiness, slight fruitiness, deep nuttiness, and creamy on the palate. Unlike many pecorinos imported to the US, this one is not too salty. The Pecorino Rosso pairs well with several of our honeys and jams.
